BLT pasta salad

Recipe adapted by Heidi  from Taste of Home .com 


2 cups elbow macaroni
5 green onions finely chopped
1 large tomato
1 1/4 cup mayo
5 t white vinegar
1/4 t salt
1/4 t pepper
1 pound bacon cooked and crumbled.
Mix mayo, salt, pepper and vinegar...then add to pasta and other ingredients ... Add bacon right before serving.

Fruit Salsa and Cinnamon chips

3 Granny Smith apples, finely chopped
2 lbs strawberries, hulled and sliced
4 kiwi's peeled and chopped
1 T. orange juice
2 T brown sugar
2 T apple jelly

Mix all ingredients together just before serving.
Serve with cinnamon chips.

SO yummy and refreshing!  :)



For the Cinnamon Chips

2 packages of flour tortilla
water
cinnamon
sugar

Preheat oven to 475.  Cut the shells into 8 sections.  Lay them on a cooking sheet and brush them with water.  Sprinkle cinnamon sugar on them and bake 5-7 minutes or until brown.  For a tastier chip, you can brush melted butter on them instead of using water.  Watch them because they can burn easily!  :)



Pumpkin Dip

1 can Libby's pumpkin mix
 2 cream cheeses, softened
 2 cups powder sugar
 1 tsp cinnamon

 All you do is mix it all together and serve with graham crackers.

Make sure the cream cheese is very soft or it will be lumpy!!

Guacamole

Recipe came from my sister, Michelle Allen

8 avocado’s
5-6 tomatoes (size proportionate to avocado)
1 jalapeno
1 med. red onion
1 bunch cilantro
1 lime
Salt

Dice tomatoes and drain any juice (I usually do the tomatoes first then prop the bowl at an angle so all the juice drains to one side. If you leave the juice in then the guacamole gets runny)

Chop/dice onion and jalapeno

Chop cilantro

Cut avocado in half. Remove avocado from shell and place in large bowl. Once all avocados are in bowl, sprinkle generous portion of salt over them. Squeeze half of lime over avocados. Mash avocados with fork until mixture is chunky. Mix in remaining ingredients and serve immediately. Guacamole does not keep but a couple of hours.

**NOTE** Depending on the size of batch you want to make….you can adjust the ingredients accordingly.
